This is a Tasmanian Single Cask Single Malt Whisky which was aged in second fill French oak ex-tawny cask, this particular bottle comes from Barrel TS0201, filled on 15/06/2007 and decanted on 08/03/2023, bottled unflocked and unfiltered (and I would guess uncoloured) at 49.7% The nose is rich, sweet and decadent with lots of oak spice and candied fruits and ...

Reviews Summary

Visitors consistently praise Sullivans Cove Distillery for its exceptional, meticulously crafted whiskies and the knowledgeable, passionate staff. The newly renovated tasting room is a highlight, offering a classy and comfortable atmosphere for an immersive experience. While most reviews are glowing, a few patrons have noted inconsistent service from some staff members, which can detract from the otherwise outstanding experience.

"One of the oldest distilleries in Australia. Quite a small scale production but they are very meticulous in their whiskeys. I had the special release tasting experience and the 3 old & rare whiskeys they offered were so unique and rich.
I personally find the French oak, second cask, to be very smooth. The guys there were experts and told me alot about the history and how special the whiskeys were made here.
Very nice experience and atmosphere.
They also display many of their special bottles."

Sonny

"Had a tasting at the newly open tasting room/building and it was an incredible experience! Thank you for diligently walking us through each whisky and then helping with sign up to waitlists to purchase. Will definitely come back!"

Pauline V

"I visited on last Thursday, and the whisky tasting flight was amazing, providing a great experience to me in Distillery. One of the staff served us well and told us about their famous American and French oak!

However, not all staff are good and polite. Two bottles were taken away from my table without any notice , and she ignored me even while I was still tasting. I asked her what happened when she did the same action to me. Her answer was, "I needed to borrow “ and went to take the bottle to the next table.

The whisky taste is amazing, but the service is too embarrassing ! The service is like a pub!"

In-depth insights and expert knowledge

The Art of Maturation: Casks at Sullivans Cove

Sullivans Cove Distillery places immense importance on the maturation process, with their choice of casks significantly influencing the final whisky profile. They are particularly known for their use of both American Oak and French Oak casks. American Oak often imparts notes of vanilla, caramel, and a certain sweetness, while French Oak can contribute richer, spicier, and more complex fruit-driven characteristics. Instagram+1

Beyond the type of oak, the previous contents of the cask also play a crucial role. Sullivans Cove utilizes ex-tawny casks, which are barrels that previously held Australian fortified wine. These casks lend a distinct lusciousness, dried fruit notes, and a beautiful depth to the whisky. The distillery's meticulous approach to selecting and managing these casks is a cornerstone of their award-winning spirit. Instagram+1

Visitors can often experience these differences firsthand during a tasting, with staff expertly guiding them through the nuances imparted by each cask type. This dedication to cask management is a key reason why Sullivans Cove whiskies are so highly regarded globally. InstagramReddit

A Glimpse into Production: The Distillery

The Sullivans Cove Distillery offers a fascinating look into the craft of Australian whisky making. A highlight for many visitors is seeing the spirit safe, a critical piece of equipment that allows distillers to monitor and control the spirit as it comes off the still. This ensures the desired quality and character are captured. Instagram

Another unique feature often showcased is their worm tub condensers. Unlike the more common shell-and-tube condensers, worm tubs are a more traditional method that can impart a slightly heavier, more characterful spirit. This traditional approach contributes to the distinctive profile of Sullivans Cove whiskies. Instagram

Recent renovations have also enhanced the visitor experience, with a new, classy, and comfortable tasting room. This modern facility complements the traditional production elements, offering a well-rounded and enjoyable visit for whisky enthusiasts. InstagramReddit

The Sullivans Cove Legacy: Award-Winning Whisky

Sullivans Cove Distillery is not just another distillery; it's a pioneer and a multiple award-winner, solidifying Tasmania's reputation on the global whisky stage. They have consistently been recognized for their exceptional quality, earning accolades at prestigious international competitions. Instagram

Their whiskies are celebrated for their meticulous production and maturation processes, often featuring single cask releases that showcase unique characteristics. The distillery's commitment to excellence has resulted in numerous awards, including significant recognition at events like the World Whiskies Awards. Instagram

This dedication to crafting outstanding spirits has made Sullivans Cove one of Australia's most decorated whisky brands, attracting enthusiasts from around the world eager to sample their acclaimed creations. InstagramReddit
